Snow lotus yeast enzyme (天山雪莲)

This is an enzyme drink was recommended by my wife's colleague, Ms. J. It contains most, if not all of the characteristics of any enzyme drink (the sourness, alcohol taste due to fermentation, etc). In addition to that, the Snow Lotus plant is said to contain medicinal properties and was used for centuries by medical practitioners in China and Tibet to cure diseases and enhance health. Most of the information on the net are available in Chinese (unfortunately I can't read Chinese) though.
One fine night on a rainy weekend, we followed Ms. J to Mr. A's house to have a look on how this enzyme is fermented and harvested from the so-called yeast of the Snow Lotus. We got some yeast from Mr. A and made it at home.

Some basic tools/instruments that you need for the entire process are listed below:
1. Big plastic bucket/container (for temporarily storing the enzyme)
2. Smaller plastic bucket (for mixing brown sugar with filtered water)
3. Plastic filters
4. Cloth coffee filter (for filtering diluted brown sugar)
5. Wooden/plastic spatula (for diluting brown sugar with filtered water)
6. Rice bowls
7. Glass container with plastic, screwed on cover (for fermentation)
8. A funnel (for pouring the enzyme into glass bottles)
Below are the ingredients and procedures (Mr. A already made one for us so what we did was to harvest and make a new one):
1. Pour out the fermented yeast (enzyme) into a clear plastic container by filtering the yeast and the enzyme
2. Clean the glass container
3. The ingredients should be mixed in the following proportions depending on the size of your glass container (note that there is no strict ruling that the ratios below have to be exact, you may adjust according to preference, e.g. if you accidentally added more than 3l of water, you can add more sugar and yeast to balance up again):
  • 6 bowls of Snow Lotus yeast
  • 2 bowls of brown sugar (Thai brown sugar cost around RM28 for 7kg, preferably use Indian brown sugar at RM21 for 7kg)
  • 2.7-3 liters of filtered water
Mix 2 bowls of brown sugar with 3 liters of filtered water. The brown sugar is hard, the wooden spatula is for stirring and crushing the sugar while mixing:
The brown sugar solution will contain some dirt, pieces of cane, etc therefore a coffee filter is needed for extra filtering:
Upon finishing the above procedures, the last step is to close the lid. You need to close and tighten the lid once, open it then close and tighten in again. The fermentation process should take place is a cool, dry place away from direct sunlight for 4 days (e.g. you start on Sunday night 9pm, next harvesting day will be Thurday before 9pm) until the next harvest.
After every 5th harvest, you should rinse the yeast using filtered water. If you plan to stop the fermentation/harvesting for a short period (say you have holiday plans, etc), you can store the yeast in the refrigerator up to 3 months.


Things to note during the process are as per below:
1. The enzyme should not have any contact with metal
2. The bottle storing the enzyme should have a screwed on cap so that it can be allowed to breathe
3. Instruments should never have any contact with oil
4. The longer you ferment, the more sour the enzyme.


Things to note for consumers:
1. This drink can be taken before or after meals, more than once a day (Gastric patients should consume after meals)
2. Consumers that has coronary diseases and asthmatic patients should dilute the enzyme with water before drinking.
3. Not suitable for pregnant ladies but can be taken 3 months after labour
4. Enzyme should be drank 4 hours later after consuming tuber crops (such as potatoes)
5. This drink is some what "heaty" therefore drink lots of water. Coconut water helps as well.

  6. Well, i have the yeast too, if anyone need it, just email me to wongyeowsoon@gmail.com. This is my 3rd time to ferment this enzyme.I feel great while seeing the "yeast" floating up and down. It shows the energy of the yeasts are so powerful though i have yet to see any changes towards my body after drinking it. But i'll keep consuming it daily cause i know this enzyme will help keeping my body healthy.

  15. i just got my first batch of enzyme and harvested recently. The set was given to me by a good friend and with insturctions in Mandarin. I googled for snow lotus enzyme and found you here and thanks for the instructions in english. I didn't know the enzyme cannot be in contact w metal as i used whisk to whisk and melt the sugar.

  21. Hi wlst! Today I discovered some yeasts are still alive and so I immediately made some new sugar solution. I took out those bubbling floating yeasts and cleaned them with fresh water before putting them into the new solution. I will let you know if there is any progress. Hope I will succeed.

  22. Hi wlst, Alison here. I have chinese notes for the snow lotus enzyme. In the notes it says 500 gm brown sugar, 1.5L water & 3 bowls snow lotus yeast. Is it similar with yours? Where can I get Thai sugar at RM28 - 7kg?

    it's supposed to have all the function of a general enzyme drink. in addition to that, since it's made from snow lotus yeast, it should provide some other healing functions. you need to search the net one this as most of the info are in Chinese...

    the recipe you have looks pretty much similar, I was told as long the ratios are correct, the amount does not matter that much.
    You can get it from Chinese Mini markets, like Lim Trading in SS15 Subang, etc

Heard that dont' let our body immune system used to this enzyme "like drug" If continues, body system will not function well in health.

  26. Hi wlst! My yeasts are alive and I am still working hard to get my next harvest. I discovered the previous ratio of different components was wrong and I corrected it yesterday. One question: can I use other types of sugar? The colour of the solution I made yesterday is quite light, although it is definitely TAIKOO sugar cane sugar.

  28. Hi, wlst. I have been brewing water kefir for a few months. Recently, I came to notice that my grains seem to be shrinking in size, although they still multiply with each harvest. My friend thinks that it is my mistake to use RO water to dissolve the brown sugar. To him, the water is too pure, devoid of minerals and the RO process does not eliminate all the chlorine! From your experience, what is your opinion? Thanks.

  29. Hi wlst, I found a lot of information about "snow lotus yeast", which is also called "kefir grain". It is better to use non-purified sugar because it carries more minerals of different types benefiting the growth of yeasts. Last time I used the very good TAIKOO cane sugar and I could not get the result I wanted.

    Your Photo 1 & 2, shows a lot of snow lotus floating on the surface but for mine, the float is just one layer. It has broken holes on the surface on the 2nd day and on the 3rd day, lesser snow lotus floating.

    May I have your comment on such situation?

    1. I am using the same container like yours; but the snow lotus is not float as much as what you have. On the 3rd day (1day before harvest), there might be only little snow lotus floating on the water level.     2. I am doing the fermentation in my office, size of a single room, air-con is on during office hours and off when I am back home. Temperature changes might affect the fermentation huh ??

    from past experience, there are a number of factors, one will be temperature, another might be the water that you used?
    your office should be ok, assuming there's no contact between the jar and sunlight?
    as for water, we are using Diamond filtered water, i have friends using normal filters, results are slightly different but not much...
    some other things that we can think off, is your container's cover tight enough? also from your photo, what's the water to yeast ratio you are using? looks like not enough water?

    First of all, thank you for your reply.
    The jar has no direct contact with sunlight, the temperature factor shall be eliminated.
    I guess water might be the factor, I am using SeaMaster RO water where it is the only filtered water I have in the office. Do you think RO Water might be the cause?
    The formula I got from my friend is 6 bowl of snow lotus, 2 bowl of brown sugar, 2 liter of water. (This friend is using this formula for a long time). I realize that the formula is different compare with yours. What is your comment??

    Check with many friends on the water issue, realizing that RO and alkaline water cannot be used as the snow lotus may die in the water mentioned above. My friend uses Amway filter and her snow lotus is doing well.
    By the way, I tried your formula yesterday, the snow lotus move up and down actively, more active than what I have done with my friend's formula. I like it very much. Thank you for sharing with me.

    I have another question: how should I keep my grains if I don't want to make another bottle of enzyme so immediately? Can I just put them in the fridge? Or should I wash them and drain them before I put them in the fridge?

    Another important question: I am from Hong Kong and so far I can't find the right kind of sugar here. The sugar I have been using is brought to me by my friend from Malaysia. Any suggestions please?

    I use "red sugar" (Gula Merah) which I bought from Tesco Penang RM5.99/1.25kg(packing under Tesco). You can try search from Tesco H.K. chain of stores.

    Previously I used brown sugar which is cheaper. There are more movements using red sugar.
    I notice less impurities in red sugar.

    You can ask your friend to post to you but postage is quite expensive.

    btw do i need to keep this enzyme drink in a fridge?

    Anybody from Penang who would like to get this yeast/drink can obtain from me FOC. Bottles not included.

  62. wlst, my friend supplied me with some seeds and i'm all set to make this enzyme but unfortunately she told me that i've got the wrong kind of brown sugar.. Her recipes is supposed to be brown sugar from the indian stores.. I bought CSR soft brown sugar (gula merah lembut). Will it affect the result of the enzymes?

    My experiences as below:
    1) Using RO / Diamond / Amway water is fine (My yeast are very active till now) - As long as clean purified water will do.
    2) Using INDIA brown sugar only. No others - I mean is the type of look very "dark and dirty" but yet creat the best result.
    3) Ways to keep the yeast - DO NOT clean it when you are not ferment - Direct get if after harvest and store in plastic container and keep in fridge (DO NOT frozen).

    would like ro share new experience using organic raw sugar cane bought at jusco Penang (RM6.90) product of Brazil.

    The colour of drink when harvested resembles that of honey.

    One major difference is that of alcohol content.
    Compared to previous brown sugar where my face becomes red due to alcohol content, using organic i did not feel the alcohol effect.

    I guess this is suitable for those opting for non alcohol drink.
    It is also only slightly sour compared to previous harvest using brown sugar.

    I found that there is totally no impurities using organic sugar.
    U can still use cloth filter but nothing is retained.

    One more thing I notice is that the floating & sinking action starts much earlier(after 1 to 2 hrs) compared to brown sugar.

  72. I am a new comer to preparing this enzyme drink. It works well for me and I used the 2 bowls lotus (chinese rice bowl), 500gm India red sugar, and 1.5L filtered water.
    But I am just a bit worried about the cleanliness of the final product drink. The gula merah is so dirty looking, and we are not supposed to boil it????? Is the enzyme drink safe to drink continuously? I thought of boiling the dissolved sugar solution and cooling it before mixing with the lotus yeast, anyone can commend on this?

  74. I used organic molasses instead of the Indian red sugar. The harvest is really good and taste better ,sweeter too.

    It is cleaner as very little residue is being left when filtered. I think it is cleaner and easier to use organic sugar. But the cost is a little more, as 1kg costs RM12.

  75. I know I may get back fired by posting this. The least I can do here is to save those surrounded you which already got the side effect. Sky mountain snow lotus has side effect. It suitable to grow above 0 deg C., it will grow in our stomach over time. It is different from Ice mountain snow lotus that will died once above 0 deg C. The person will have bloated and hard stomach with lots of wind. The remedy is take 1 sachet bamboo salt (must be Hai-O direct selling) +100ml water every morning empty stomach. I swear that I'm not Hai-O marketeer, purely out of compassion I'm relaying this. So far already 5 cases I come across. Worst part was people do not believe it because there are far too many testimonials. Please pass this remedy to those who already got this side effect. After consuming bamboo salt, the person might have diarrhea to pass it out. Amitofoh. Sadhu to all.

  78. First was a friend over a dining table mentioned he introduced a friend to a sinseh, the sinseh is my close friend. The friend got the side effect and prescribed with bamboo salt. The sinseh happened to be the same sinseh who cured me in 1999, I was paralyzed then. The topic triggered much because I was promoting snow lotus heavily over the dining table.

    2nd time was last sat, 4 are from same family. 4 all had the side effect. This trigger 2nd alarm. I didn't ask how long they had been consuming. I bounced to them, as I was bringing a patient to meet the sinseh on the same day. The mother is the one who introduce snow lotus to her family, she said the exact of what you have been saying here...how good and miracle this snow lotus is, and how many testimonial. Let's put it this way, we are no doctor, neither we are practioner to say this medication is better than other. Hai-O Bamboo salt cured this is a fact, a fact is a fact. I reemphasize here again, I'm not hai-o direct selling sponsor.

    If you ask me for sources, I don't have. By the time if this is in the articles or newspaper,probably too late. Sense of guiltiness will lie on you once the truth revealed. I had posted this, guess I have my selfishness that I don't wish to sit in with the guiltiness. I'm relieved now, your choice, whether to carry on as non practioners to carry on promoting this even there is a chance of 1% people out there got side effect. Or your choice to get to know people who has side effect, help them with remedy.

    I fear of karma, anything wrong I posted here, I had created a cause that I would face the consequences. I'm willing to face it after what I bounced onto sat.

    I'm not here to convince, please pass on the remedy for those of your friends who had the side effects.

    Is this side effect you are saying is
    "The person will have bloated and hard stomach with lots of wind." as i understand from your post?

    Sometimes there will be reactions or side effects as Kong put it but my view is that almost natural herbs/remedies when consumed will have all kind of reactions depending on individual health.

  80. No, it is not the vertigo reaction as termed in scientific term. One clear difference is when you press on the person stomach, it is very hard as if a huge growth inside unlike wind. Vertigo reaction took placed generally at the beginning stage of consuming. This is certainly not.

    "balancing" sound simple, one must be a practioner to know when you need to balance, when you need to discharge, when you need to accumulate.

    I don't believe in chinese medication until it cured me. Since then I read, "wang di ne chin", " long peng' chow mu' and so forth. I learnt from virtue practioner. Chinese medication has a history of 4500 years, even virtue practioner may not be able to crack all the codes, what's more we are not. There are millions of plants out there, so call "hot remedy". Bottom line we are not expert. So called expert must have remedy. Hear say is dangerous.

    Simply, chinese medication categorized into 5 elements, so does our body. This 5 elements again correspond with sour, sweet, spicy, bitter and salty. There are many phrases like like "hot internal cold external", wiseverse or even neutral. The practioner would need to determine the cause of the illness before prescribe. eg. some critical illness need "poison against poison". Or simple to say, he/she needs to determine to reduce/pass out the excessive elements; balancing it; or fighting against it. Fire kills water; wood would reduce the water element, both function to treat water elements, which method to use, we are not expert. The practioner knows the point when the patient need to stop consuming the remedy, he also knows whether his prescription is neutral or if it has side effect in long run. We ain't doctor here.

    I had accumulated 3 hand writtened books (I need to remember and hand writtened, this is how elderly practioner teach! You are not allowed to write down notes, when he shares. No photocopy, all must be handwrittened). They include remedy to cure cancer, I dare not pass it out, because I'm not professional in that line. Except those confirmed neutral remedy. Neutral means no matter how much you consume, no side effect in long run like alfalfa. Bottom line here is how do you know your balancing point? This is also the reason why I don't do direct selling though some neutral product I do use them.

    This is the last time I posted blog here. I fear of karma, writer faces severe karma because the cause only ended when the circulations stopped. One word wrongly writtened, it is the cause that I had planted. I asked for pardon if my post disturb your feeling and for any wrong word used here.

    You can put in fridge & I am of the opinion it can last a very long time.
    I don't know why u want to store it for a long time.
    i normally finish it in less than 2 weeks.

    I have drink it for a few months now.
    The result is I don't have anymore constipation problems & cholesterol level have been reduced.

    I have been observing my colon waste everyday.
    It is very oily compared to if you don't consume snow lotus.

    The only explanation i can think of is that snow lotus do detoxify our colon walls & that causes our waste to pass out easily.

    This is an interesting blog. I took this tibicos juice or snow lotus for about 2 months now. Both my sisters and I have hard, bloated stomachs but not my husband and friends. So what Kong said is true. I guess some people have it some don't. I stopped for a day or two and then continued. So far I don't have the bloated stomach anymore but my sister is still having it.

If only we can pass our comment immediate, just below any new topics, it may benefit or enhance this blog further.     Buddhist believers should be safe enough to consume this product, for we do not add in any "wine biscuits" during its fermentation. Moreover, only Buddhist Monks should not be drinking any alcohol, for they are governed by the rules of their monastery, & they had really swear for it.
    As for Miss Cecelia Kong's post, she's just trying to tell us from her own experiences, & her concern is worried for those, which had abuse or misuse this product.     for two weeks, and i resume to culture it; but it does not turn out as before. No bubbles on the top layer, no tibicos moving up and down, and the end result - the tibicos drink - tastes very much different from what i did before. It taste like a fermented drink; it smell one kind, is it spoilt? I am using the same meterials and same method that i used before...

I was wondering if this were to happen again, can i reuse the yeast after rinsing them throughly in water & re-make a fresh batch using them again or i shouldn't?

I got the snow lotus enzyme from friend and she tough me how to prepare. 500gm of organic brow sugar, 1.5 liter of mineral water about 300gm of fermented snow lotus and ferment for 3days (72 hours)in a glass jar.

    From the above blogs and my own experience:-
    1) There is alcohol in the enzyme from the frementation process - people with liver problem advisable to take small amount and flush alcohol with water after consuming. I supposed consuming enzyme after food will also help absorbed some of the alcohol.
    2) The enzyme tasted sour and a blogger tested it for high acid. Ms Kong and others also reported cases of bloated stomach - therefore taking small amount of enzyme after food would help those with gastric and bloated stomach problems. This is my experience from taking pills that caused gastric problems.

  122. Actually snow lotus is found high up in the mountains, and it is very costly. I think what everyone refer to here is kefir grains. Plse google it. Think the sugar: grains:water proportions is a little questionable. Didn't anyone feel the sugar used is too much? I understand that approx 4 tbsp sugar to 1 litre water and 1.5 tbsp kefir grains. Anyone care to comment?

  138. i have try my 1,2,3 pot of yeast all failure until a nice guy gave lot of supply and i test in diffrent way . i found up the solution is temperature, 1st put a pot with lotus etc in a bucket of water n a little ice not to cold or the lotus will not do the jop. and wallaa my yeast rise bubble like a angel.

    I got the enzyme from the local monk in my village here in Thailand and are up for the 5th harvest.
    Is it possible to get a link to the website which has the last two images of the booklet shown in this Blog or a high resolution scan of the booklet ?

    Is it ok for people with diabetes to drink this ?

    I wanna ask: is it brown sugar same as PALM SUGAR? the color is brown too but it's quite expensive (Rp35.000/kg or around RM11.30/kg). we call it GULA AREN not made of sugar cane and it's not red sugar. Palm sugar is allowed for cancer's patients.

    And exactly, the harvesting need 3 days (72hours) or 4 days (96hours)?. Most of the information i get from my friends in Indonesia is 3 days only. thanks all for replying.
